Golden Hooves launches two new cheeses, as the regen revolution stomps on
Golden Hooves has announced the arrival of Red Leicester and Smoked Cheddar this month, expanding its line-up of regeneratively farmed cheeses. Daring cheese lovers to think differently about dairy, Golden Hooves now has four deliciously regenerative products available, after Mature Cheddar and Vintage Cheddar arrived to shake up the status queso last year.
Committed to doing its best by the planet, but also by the top quality milk from its co-op’s farms, Golden Hooves has created a Red Leicester that stays true to its origins, rather than producing another coloured cheddar-style cheese. Matured slowly for a minimum of 6-8 months, Golden Hooves Red Leicester has a deep russet colouring and medium to firm body, carrying a slightly nutty and oaky flavour, accompanied by a distinct citrus back note.
Golden Hooves Smoked Cheddar is satisfyingly smoky, but keeps the next level cheddar centre stage. Each cheddar is selected by the co-op’s graders to have the right body, texture and depth of flavour required, before it is smoked lightly over oak sawdust for 10 hours. While delivering authentic oaky notes on the nose and on the palate, this cheese still lets the curd from herds sing.
Part of British farmer-owned dairy co-operative, First Milk, Golden Hooves makes its cheese from 100% regeneratively farmed milk. Using grazing cows to work the land with their hooves, Golden Hooves farms are taking steps to continually encourage plant and wildlife biodiversity, protect the soil and maintain living roots, a process which is believed to remove carbon from the atmosphere and sequester it into the soil. Part of First Milk’s commitment to continual improvement, these activities are supported by extensive research to measure the impact that these initiatives are having on the soil.
